Cut tops off 6 peppers or cut lengthwise into

halves.  Remove inner fibers and seeds.

Cook in boiling water 2 to 3 minutes.

Remove and drain, sprinkle with salt and fill

with corned beef hash, or creamed corn, or

one of the following stuffings.

Cover with buttered crumbs and bake

in moderate oven (375 degrees) 25 minutes.

 

Filling #1 

2 cups rice, cooked (seasoned)

spanish rice works well.  But any

seasoned rice works.

or

Filling#2

2 cups macaroni and cheese.

 

or

Filling #3  daddy’s favorite

1 pound ground beef

1 envelope taco seasoning

3/4 cup canned kidney beans,

rinsed and drained

1 cup salsa

topping with;

1 med tomato, chopped

1/2 cup shredded cheddar cheese

1/2 cup sour cream

cook beef, drain stir in the taco

seasoning, kidney beans and

salsa. 

fill prepared peppers, place

in an ungreased 13 x 9 dish

cover and bake. 20 min.  Top with

tomato and cheese. Serve with

sour cream.
