Fresh made chicken strips beat the frozen version by a mile !!!

    Ingredients :

2 cups crushed saltine crackers ( the finer, the better )

1 teaspoon garlic powder

1/4 teaspoon salt

1/2 teaspoon dried basil

1/2 teaspoon paprika

1/8 teaspoon pepper

 

1 egg ( beaten )

1 cup milk

 

1 1/2 lbs. to 2 lbs. boneless skinless chicken breast  

 

    Directions :  ( heat oil in fryer to 375 degrees, 1 to 2 inches deep ).

Mix first 6 ingredients together and put into a shallow bowl ( I use a pie pan ).  Combine beaten egg and milk in another shallow bowl.

Trim excess fat from chicken breast and cut into 1/2 inch strips.

Dip chicken strip into egg mixture, then roll in cracker mixture.  Carefully place in heated oil and cook 2 to 3 minutes per side, turning once ( cook only three or four strips at a time ).  Remove from oil and place on paper towel covered tray.

Turn off the fryer and get out the dipping sauce. I like mine dipped in BBQ sauce.
